Our week so far

The big news around here is that Ethan is cutting his first tooth. It is one of his bottom front teeth. He was a bit cranky for a few days, but seems fine now that it has cut through the gum. It will be so weird to see him smile and have a tooth sticking up. He keeps feeling it with his tounge.

I am feeling better and so is Ethan (besides still being a bit congested), however Matt has now come down with the cold. Hopefully it won't last for long for him.

We've had a nice week and kept pretty busy. Yesterday we went on our first official "play date" with a few other mom's from church. It was a beautiful day to sit outside at the park. The weather is just perfect right now.... sunny and not too hot. Oh if it could just stay like this all summer :)

I am currently taking the very last class I need to clear my teaching credential. It is a stupid health class, and I actually already took it through another school, but then found out after the fact that it doesn't count to clear my credential (just ones before it). So I wasted $500 and my time. Now here I am taking it again. It is so ridiculous because it's pretty much the same content. California makes you jump through the stupidest hoops to clear your credential. The good news is that it is online and it's only 4 weeks long, so I should be able to manage. At least health is an easy topic.

We had dinner at Danny and Jolene's on Wednesday. It was great to see them. Ethan actually did really well and stayed awake until we left at 8:30 (and he wasn't even fussy). It had helped that he had had two really good naps that day. What a difference good naps make! Here are some pictures of the boys:

Christian was so cute, he was laughing up a storm at his mama. He is crawling everywhere now and pulling himself up on everything. I told him not to give Ethan any ideas because I'm not ready for him to crawl yet.

Orange Rosemary Chicken

I made this tonight for dinner and it was SO yummy. I will definitely be making it again. I served it with salad, sweet potatoes and asparagus.

Orange Rosemary Chicken

Serves 4

1 cup orange juice
1/2 cup dry white wine
1/2 cup maple syrup
2 teaspoons chopped fresh rosemary
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
4 skinless, boneless chicken breast halves
2 tablespoons butter
2 tablespoons olive oil

1. Bring orange juice and wine to a boil in a small saucepan. Reduce heat slightly, but keep high enough to continue a low boil for 5 minutes, stirring occasionally. Stir in maple syrup and continue boiling for another 5 to 6 minutes, stirring frequently, until glossy and just slightly thickened. Set aside.

2. In a small bowl mix together the rosemary, salt and pepper. Rub mixture on both sides of chicken breasts, and set aside.

3. Melt butter and olive oil in a large skillet over medium high heat. Add chicken breasts, cover skillet and saute for about 5 minutes on each side until lightly browned. Pour orange-maple mixture over chicken (mixture will boil and bubble). Reduce heat to simmer; cover and let cook for another 10 minutes, basting occasionally, until chicken is cooked through. Remove chicken and continue to simmer sauce until it has turned into a rich, thick glaze. Don't do what I did and overcook the glaze... it tasted good but turned into taffy.

Ready for more sunshine

After a blustery cold weekend we are ready for the sunshine. We spent most of our time indoors being that it was freezing (not literally, but it was in the 40s). We really didn't do a whole lot since both Ethan and I were sick. I'm feeling better but Ethan still has his cold. I'm ready for the poor little guy to feel good again.

Matt's family came over on Monday for a little BBQ. The sun peeked out so we were able to sit outside for most of our BBQ. We were a little cold, but it felt good to finally be outside being that Memorial Day is always kind of the start of summer. We cooked some good steaks and potatoes and corn on the cob, and enjoyed a nice time together. I only took a couple of pictures and then forgot to get my camera back out.

Ethan and I met my brother for lunch today at Panera Bread because he took the week off. It was my third time having Panera Bread in 4 days, yet I'm still not tired of it. It was nice to see him for lunch, as that usually never happens.

After we got home we sat outside for a little bit today and I took a couple of pictures of Ethan.


I just couldn't resist joining in on Organizing Junkie's Basket Carnival. I love baskets. I can't stand clutter and I find that baskets are VERY useful in helping to maintain a clutter free home. Baskets create order, they define a space, and they make what would otherwise be a pile look clean and defined. They also create boundaries and limits. My husband jokes that as long as something is in a basket, I'm happy. I may be anal, but I can find almost anything really quickly in my home. Not only that, I can tell someone else where something is with ease. When everything has a designated space, it makes life much simpler.

I have lots of baskets in my house, they are all over. Not only do I love baskets, I also love to label them with my trusty label maker. Here are just a few examples of how I use baskets in my home.

A pretty basket to hold dog toys in the family room. Cookie knows that all of her toys are in here. She is so good about only playing with these things and leaving Ethan's toys alone. What's funny is that once in a while she'll even put a toy back into her basket.
This is Ethan's dresser. I even have baskets labeled in there (it helps when Matt or someone else needs to dress Ethan)

just a little stir crazy

I think Ethan's cold has made its way to me. I'm not feeling so great, yippee (I really hope you detect my sarcasm there). It's been raining all day, and I think it's supposed to be a gloomy weekend. I guess the weather decided to squash everyone's BBQ plans for the holiday weekend. I shouldn't have complained about the 105 degree weather last weekend, look what I got instead. Maybe the weather will prove us all wrong and clear up.

I haven't been out of the house since Wednesday. I feel a little stir crazy. I think it's compounded by the fact that I've been cooped up with a cranky baby today. I feel bad for him because he doesn't feel well, but now I feel bad for myself too because I don't feel well. I was going to go out to run an errand today, but didn't really feel like trekking through the rain with a sick baby. Okay, I'll stop grumbling now, no one likes a complainer.

On the plus side I did watch the Grey's finale and a movie today. Nothing makes me want to turn on the tube like rain. There's just something about this weather that screams out to me "be lazy and watch TV". It's a good thing I don't live in the Pacific Northwest, then I'd never get anything done and I'd probably weigh like 400 pounds.

I got in some scrapping this afternoon while Ethan napped. This first layout I had done a long time ago, I just had to add the very last picture. In case you can't read the title it says "Watch me grow"

This is a video I took of Ethan the other morning. He was so funny because whenever the music on his toy would play, he would sing. (somehow I posted this twice and I can't seem to get rid of the second one)

Sick again

Ethan has come down with another bug. It seems like he just got over the last one. Poor guy is all congested and has a bad runny nose and the same eye that has been infected is starting to look goopy. One nice thing, he seems to nap really well when he's sick. I guess he needs the extra sleep. Hopefully this won't last long.

We went from 101 degrees and roasting hot on Monday, to rainy, cold and 50 degrees on Thursday. Crazy weather. This weekend is supposed to be cold and possibly rainy, quite a contrast from last weekend when we couldn't even handle staying outside for long due to the heat.

We don't have much planned for the holiday weekend. We're having Matt's family over to BBQ on Saturday. The whole idea was that we could enjoy our backyard since it's finished, however if it rains I suppose we'll be inside... bummer. Hopefully it will be nice enough to sit outside. That's really all we have going on so far. Crazy thing, I bought groceries for Saturday and it was actually cheaper to buy steaks than it was to buy burgers, buns and all the fixings. I can sure tell the prices on a lot of different items have gone up. Good food is something we enjoy a lot. I love to make different dishes with lots of ingredients and try new recipes. It's really hard for me to scale back and cook more simply, but I'm trying to do that.

This morning I got my house cleaned, the dog washed and my toes and nails done (I did my nails myself).... I'm feeling pretty good that I got all that done :) I think we'll just hang around the house the rest of the day, especially since Ethan is sick. Hope you all have a great holiday weekend!!

1. What were you doing 10 years ago?
Hmmm... 10 years ago I was 16. That means I had gotten my license and was enjoying driving around.... oh wait, by this time in my 16th year I had totaled my dad's car, so I wasn't driving anymore. Instead I was working at Manhattan Bagel trying to earn money to buy another car!

2. What are 5 things on your "To Do" list?
  • Scrap- I want to do pages for Ethan's book for 5 and 6 months.
  • Clean my house (I'll do that tomorrow)
  • Go to the grocery store (I'll also do that tomorrow)
  • Return some shorts at costco
  • Make an appointment

3. What are 5 snacks you enjoy? (In no specific order)

  • Fuji apple with peanut butter

  • Buy a hunk of property in Oak Glen or upper Yucaipa and build a huge house for us and a house for Jolene and Danny :) I'd probably buy a beach house too.

Something I learned yesterday

That root canals are not fun and they hurt. Also, if you have soft teeth like mine, it seems no amount of flossing seems to help. The cavities just take up residence in your teeth and decide the only way they are going to leave is through a dentist's drill. I still have one more appointment to finish getting rid of my roots, then I have to get a monster crown. At least we live in modern times and I didn't have to get my tooth pulled or something. Plus, although my teeth are soft, they are straight and bleach well, so really that's all I care about... it's all about the cosmetics. As long as they look good, I'm happy ;)

Turtle lips

Ethan has figured out how to suck his bottom lip and is very amused with it. It's actually pretty ridiculous and funny looking. We keep saying they are his "turtle lips".
